Ingredients

SPICY ELOTE

  • 4 medium corn on the cob, shucked
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • Zest from 1 lime
  • ½ tsp chili powder
  • ½ tsp paprika
  • ¼ cup cilantro, chopped
  • 1 bag Quest Hot and Spicy Chips, crushed
  • ½ cup cotija cheese
  • Lime wedges

Method

  1. Grill corn until tender.
  2. In a bowl, stir together the sour cream, mayonnaise, garlic, zest, chili powder, paprika and half of the cilantro.
  3. Slather mixture over corn and top with crushed hot and spicy chips, cotija cheese and remaining cilantro. Serve with lime wedges.
