These no-bake Keto Brownie Truffles are the perfect sweet ending to your day. They’re easy to make and taste just like your favorite brownie batter, but with a fraction of the carbs.

You may have noticed that I have a thing for keto brownies. You may also have noticed that I love making bite-sized desserts like keto truffles. So why not combine the two loves into one special treat?

You could, of course, go to all the trouble of making a pan of brownies, letting them cool, crumbling them up, adding some additional ingredients, and rolling them into balls. But that’s a lot of unnecessary effort!

These Brownie Batter Truffles skip all the extra work. So you can enjoy the chocolatey deliciousness all the sooner.

Why you need to try this recipe

Many people love the flavor of raw cookie dough and raw brownie batter. I can’t lie, I am one of these people. We all know it’s not the safest thing to eat, but who can resist licking the spoon?

Thankfully, these truffles are perfectly safe to eat. They contain all the ingredients of a gooey brownie except for the eggs, so there’s no risk of contamination. And they really do taste like brownie batter.

It’s a wonderful way to get all the same flavors in an easy no-bake dessert. While you do need to freeze the truffles for a little while, it takes minimal effort to make them. And they’re perfect for any occasion or holiday like Valentine’s or Christmas, or just because you want some!

Ingredient Notes

  • Almond flour: For the best consistency, use a finely ground almond flour. You can also use sunflower seed flour for a nut free option.
  • Sweetener: Make sure you use a powdered sweetener to avoid any grittiness.
  • Cocoa powder: For a deeper chocolate flavor, I recommend using Dutch process cocoa.
  • Butter: The melted butter is the “glue” that binds the truffles together. I tend to use salted butter for most recipes, but unsalted works as well.
  • Sugar-free dark chocolate: For the chocolate coating, you can use your favorite sugar-free chocolate. Always melt it over a double boiler style to avoid seizing.
  • Cocoa butter: This helps to thin out the coating. You can also use coconut oil but the truffles will be more melty at room temperature.
  • Pantry staples: Vanilla extract and salt.

1. Combine the dry ingredients: Whisk together the almond flour, sweetener, cocoa powder, and salt.

2. Add the wet ingredients: Stir in the melted butter and vanilla extract until the dough comes together. If the dough is too crumbly to roll into balls, add water one tablespoon at a time until it can be squeezed together.

3. Roll and chill: Roll the mixture into 1 inch balls and place on a waxed paper lined baking sheet. Freeze at least 1 hour.

4. Melt the chocolate: In a heatproof bowl set over a pan of barely simmering water, combine the chopped chocolate and the cocoa butter or coconut oil. Stir until melted and smooth.

5. Coat the truffles: Drop a frozen truffle into the chocolate, tossing to coat thoroughly. Lift out with a fork and tap gently on the side of the bowl to remove excess chocolate.

6. Let the chocolate set: Return to the baking sheet to set. If using sprinkles to decorate, add them right away before the chocolate hardens. Repeat with remaining truffles.

Tips for Success

The amount of water you might need depends on a number of factors, including the almond flour, cocoa powder, and sweetener you use. So hold back on adding any until you see the consistency of the dough. Then add it one tablespoon at a time, mixing in well, until you can easily roll balls that hold together.

Freezing the truffles before dipping them helps the chocolate set faster. But it does mean that you need to add any decorations like sprinkles or chopped nuts right away. Add them directly after dipping each truffle, before the chocolate begins to harden.

Sweetener Options

Make sure you choose a powdered sweetener to avoid grittiness. But the consistency of the truffles is not dependent on which kind of sweetener, so you can use erythritol or allulose-based sweeteners.

You can also use a highly-concentrated sweetener such as stevia or monk-fruit extract. You will need to taste and adjust the sweetness as desired. I can’t really guide you on how much to use, since brands differ a lot in sweetness.
