I also include baking powder, xanthan gum, and a bit of salt to complete my mix.

Low-carb sweetener
I was tempted to use all liquid sweetener in this strawberry cream cheese frosting. But, I ended up using a half cup of Swerve Confectioners and added in vanilla stevia drops until the sweetness was good for me.
If I were to sweeten up this low-carb strawberry cream cheese frosting more, I would have added in a small amount of monk fruit drops. I find that using a blend of different sweeteners provides the best taste.
Fats
I use a blend of fat sources in this recipe for a macro-friendly dessert. Coconut oil and butter add great fat content to the cupcakes, with added unsalted butter in the icing.
Eggs
Eggs are essential to keto baking – they bind these cupcakes without adding excess carbs.

- Don’t add too much granular sweetener. Most of the bulk sweeteners contain erythritol, which can crystallize if too much is used.

- Don’t worry if the tops of your cupcakes sink in from underbaking – that just leaves more room for extra keto cream cheese frosting.
How to make cupcakes with strawberry cream cheese frosting
Ready to make yummy cupcakes with keto cream cheese frosting? Let’s get started!
Step 1: Prep oven and prep baking pan
First up, preheat your oven to 350°F and line your muffin tray with cupcake liners for easy baking.
Step 2: Combine dry ingredients
Next, combine all of your dry ingredients in a large mixing bowl and stir well.
Step 3: Beat in wet ingredients
Then, beat all of the wet ingredients (minus the eggs) into the dry mixture using an electric mixer at medium speed.
Once combined, add the eggs and beat for another couple of minutes.
Step 4: Bake and cool
Divide your batter evenly amongst the cupcake liners and bake until done.
Let them cool for a few minutes before transferring to a wire rack to finish cooling.
Make your strawberry cream cheese frosting
While your cupcakes are baking, take this time to make your sugar-free strawberry cream cheese frosting!
Step 1: Cream butter and cream cheese
Start the base of your frosting by creaming together the butter and cream cheese.
Beat them together until nice and smooth.
Step 2: Puree strawberries
Wash and slice the strawberries in half. Add them to a small blender or food processor and puree.
Step 3: Mix puree and cream cheese mixture
Add 3 tablespoons of the strawberry liquid and the vanilla stevia into the cream cheese mix.
Beat everything together until mixed in.
Step 4: Add powdered sugar
Now, it’s time to add in the powdered sugar slowly.
I recommend doing this part in spoonfuls to make sure it doesn’t clump the frosting and it blends in smoothly.

Preheat oven to 350°F. Line 12 muffin molds with cupcake liners.

In large mixing bowl, combine the almond flour, coconut flour, sweetener, baking powder, xanthan gum and salt.

Beat in almond milk, coconut oil, butter, and vanilla to the dry mix with an electric mixer on medium-high speed for about 2 minutes, scraping bowl as needed. Add the eggs and continue to beat an additional 2 minutes.

Divide batter between cupcake liners.

Bake in 350 °F oven for about 20-30 minutes or until toothpick inserted in center comes out clean and cake springs back when lightly touched.

Cool cupcakes for 10 minute then remove from molds and allow to cool completely on to wire rack.

Cream together the butter and cream cheese.

Puree the strawberries in a small blender or food processor.
