COOKIES & CREAM RASPBERRY CHEESECAKE BARS

Ingredients

Crust:

  • 1 cup almond flour
  • 1 Quest Cookies and Cream Hero Bar, chopped
  • 1 tbsp coconut flour
  • ½ tbsp unsweetened special dark cocoa powder
  • Pinch salt
  • 3 tbsp butter, cold

Filling:

Topping:

  • ½ cup sugar free chocolate chips
  • 2 tsp coconut oil
  • 2 cups raspberries

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
  2. Place the almond flour, Hero Bar pieces, coconut flour, cocoa powder and salt into a food processor andblend until combined.
  3. Add in the butter and pulse until a dough forms. Press the dough into the bottom of the pan and bake for 8-10 minutes. Let cool.
  4. In a small bowl, whisk together the water and gelatin and set aside.
  5. In a larger bowl, whisk together the yogurt, heavy cream, sweetener and protein until smooth. Add in the gelatinmixture and stir until well blended. Cover and chill for 30 minutes.
  6. Melt the chocolate and coconut oil together and stir until smooth.
  7. Pour over the top of the cheesecake and tilt the pan in all directions so the chocolate spreads in an even layer.
  8. Top with raspberries and chill until solid. Cut into 16 bars and serve.
