Ingredients

BAKED APPLES

  • 2 Apple Pie Quest Bars
  • 5 fuji apples
  • 1 tbsp zero calorie brown sugar
  • Pinch salt
  • ½ tsp cinnamon
  • ⅓ cup chopped pecans
  • 2 tbsp melted butter

Method

  1. Preheat the oven to 350 F and cut the Quest bars into small pieces and place them on a baking sheet lined with parchment paper.
  2. Bake for 5 minutes. Let cool completely.
  3. Once cooled, place the pieces into a food processor or blender and blend until small crumbles form.
  4. Meanwhile, in a bowl, stir together the bar pieces, sweetener, salt, cinnamon and chopped pecans.
  5. Add in the melted butter and combine.
  6. Cut the tops off of the apples and use a melon baller to scoop out the center. Fill each apple with the crumble mixture.
  7. Increase the oven heat to 400F cover the apples with tin foil and bake for 15-18 minutes.
  8. Serve warm with low calorie ice cream if desired.
