Sometimes you crave something so lusciously fudgy and rich without much effort. You just want to be able to snap your fingers and have that sweet treat magically appear in front of you.
Okay, so these Keto Air Fryer Brownies aren’t quite that easy, but they are close! You can whip them up and be enjoying them inside of 20 minutes. And they have all the fudgy chocolatey flavor your little heart desires.
I invented this recipe when I was craving keto brownies but short on time. And I’ve already made them several times since then. They satisfy all of my cravings, and then some!
Why we love it
These easy air fryer brownies are actually based on my Chocolate Protein Muffins. I’ve had so many readers say that they taste like brownies, I thought why not formalize it?
And then I thought, why not try making them in the air fryer? So quick and easy that way! And then I thought, why not stuff them with some keto peanut butter cups? How can you get more delicious than that?
They turned out even better than I hoped, with the perfect fudgy consistency and a sweet peanut butter center. I went right ahead and made a second batch, and took a couple with me when I traveled to Canada recently. They travel well too!
And this is also a low carb high protein recipe, with 12g of protein per brownie. Air fryer brownies that are good for you. How awesome is that?
Ingredients you need
- Peanut butter: I recommend a really smooth natural peanut butter for the best filling consistency. I love Santa Cruz brand, but Justin’s is also good. You can use other nut or seed butters if you have a peanut allergy.
- Butter: You can substitute the butter with coconut oil or avocado oil
- Cocoa powder: For a rich chocolate flavor, use Dutch process cocoa.
- Sweetener: I used Swerve Confectioners to avoid any grittiness from recrystallization. See the Tips for Success section for more alternatives.
- Collagen protein: Using collagen protein (aka collagen peptides) is key to the wonderful consistency of these brownies.
- Pantry staples: Eggs, vanilla extract, salt.
- Keto peanut butter cups: This is optional. You could also just top them with some chopped nuts or chocolate chips.
Step by Step Directions
1. Soften the peanut butter: In a medium microwave safe bowl, melt the peanut butter and butter on high in 30 second increments. Whisk in the the sweetener and vanilla extract, then whisk in the egg until smooth.
2. Add the dry ingredients: Add the collagen, cocoa powder, and salt and stir until well combined. Stir in just enough water to thin the batter until it is easily pourable.
3. Use silicone muffins cups: Divide the mixture between 6 silicone muffin cups. Press one peanut butter cup into the cups until just covered by the brownie batter.
4. Bake the brownies: Preheat the air fryer to 300ºF. Air fry the brownies until they are puffed and just firm to the touch on top, 7 to 10 minutes. Remove and let cool before serving.
Tips for Success
If you don’t have silicone muffin liners, you can try using small ceramic ramekins. Make sure you grease them first. You may not be able to get the brownies out in one piece, regardless. But you can eat them with a spoon!
If you don’t want to purchase or make peanut butter cups, try just adding a nice dollop of peanut butter to the center of each brownie, pushing it under the batter before baking.
You don’t have to use any peanut butter cups at all. You can top the brownies with chopped nuts or chocolate chips. Have a peanut allergy? Try using any nut or seed butter for the brownie batter.
You do need to use collagen protein for these air fryer brownies. If you don’t have the chocolate variety, try using plain and adding an additional ½ tablespoon of cocoa powder.
Sweetener Options: I tried this recipe both with powdered Swerve and with allulose. It works very nicely both ways. You may even be able to use concentrated sweeteners like stevia or monkfruit extract.

Enjoy these brownies a little on the warm side or after they’ve cooled off completely. You can also top them with a little sugar free whipped cream or some keto ice cream.
An air fryer is really just a small, high powered convection oven so they work well for baking. You do need to make some adjustments, since the heat is so concentrated. I often reduce the temperature by 25 to 50 degrees and reduce the time by several minutes as well.
This keto air fryer brownie recipe has 7.5g of carbs and 3.8g of fiber per serving. That comes to 3.7g net carbs per brownie.
To bake these in the oven, you can follow the basic instructions for my chocolate protein muffins. If you want that fudgy brownie consistency, you will want to bake them for less time. Keep your eye on them!
