Ingredients

LEMON BLUEBERRY CRISP

  • Crisp:
  • 2 Lemon Cake Quest Bars
  • 2 tbsp zero calorie sweetener
  • Pinch salt
  • 3 tbsp butter, room temperature
  • Filling:
  • 4 cups blueberries, fresh
  • 1 tbsp lemon juice
  • 1 tbsp zero calorie sweetener
  • 1 tbsp cornstarch

Method

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. Break the Quest Bar into small pieces and place them on the baking sheet. Bake for 7-8 minutes and golden. Let cool completely.
  3. Once cooled, add the bar pieces to a blender and blend until fine crumbles form and transfer to a mixing bowl with the zero calorie sweetener, salt and combine. Add in the butter and use a fork to mix. Set aside.
  4. In a bowl, stir together the filling ingredients and then distribute between 6 ramekins. Top with crisp and bake for 15 minutes.
  5. Serve warm with ice cream if desired.
